Preserving Your Catch: Cooling and Freezing Done Right

Back at the dock is the easy part. What happens in the next hour decides whether that fish tastes like the sea or like bait. In summer the clock starts the moment it comes over the side.

The first 30 minutes

Bleed it at once: cut behind the gills or spike near the heart and hold it head-down over the side. Blood left in the muscle is what gives fish that heavy taste, so it goes straight onto ice.

Ice slurry or dry ice?

A slurry of crushed ice and seawater chills fish faster than ice alone, covers the whole body and stops it drying out. Dry ice is colder and suits long trips, but never let it touch the fish: insulate it with cloth. For a day trip, slurry wins.

Gut and gill early

In Kuwaiti heat the gills and guts break down first and bacteria move into the flesh. Open the belly and pull the gills early, then rinse with clean seawater.

Off the deck, species apart

A sunlit deck is the worst place for a fish; fifteen minutes softens it. Every fish goes into a closed, iced box, and big fish stay apart from small ones and anything bleeding.

Keep the cooler shut

A cooler only works if it stays closed. Every opening lets hot air in and cold air out. Pack it at home and keep the fish box shut until you are back.

Fridge vs freezer

The fridge is for eating soon, the freezer for keeping long. Never freeze a whole large fish and expect a good result: slow freezing makes ice crystals that tear the cell walls, so you thaw out watery, tasteless meat. Portioning and fast freezing keep the taste close to fresh for a month.

Portioning and packaging

Label everything

Write species and date on every bag: in two months you will not remember which is which. First in, first out. Oily fish like kanad are best within one to three months, lean white fish hold six.

Thawing and fridge time

Thaw in the fridge overnight with a plate underneath. Thawing on the counter or in hot water pushes the fish through the bacterial danger zone, and never refreeze after thawing. Properly iced fish keeps one to two days in the fridge, cooked three to four.
